Simple Breakfast Casserole
We are blessed to have an abundance of fresh eggs. Last month, our six girls laid 130. We ate as many as we wanted and gave away quite a few.
One of my favorite egg recipes is this Simple Breakfast Casserole. I make this any time we have a family breakfast or brunch and occasionally, when we have a lot of eggs, I’ll make it for dinner.
The one I make has just five ingredients (plus pepper). If you’ve followed me for a while, you know I’m not much of a cook but I’m trying. This is a simple recipe that you can’t really mess up. Even this morning as I was making it and talking with my mother-in-law, I couldn’t remember how much milk I had added so I just added a little more. It was delicious.
Ingredients:
9 eggs
2 Cup milk
2 Cup Shredded Cheese
1 20 oz bag of Hash browns
1 lb. Sausage
1/4 tsp of Pepper
This breakfast casserole is pretty basic which is why I like it. When it comes to holidays and get-togethers, there’s so much else going on (cleaning, shopping, etc.) that I need simple.
So, let’s get cooking
Preheat oven to 350 degrees. Grease 13×9 inch baking pan.
First brown the sausage. I make a double batch each time I cook this. It’s one of the Bearded Roosters’ favorite things so we will eat any left overs the following day. I’ll get a 3 lb. tube of sausage for convenience. It makes it a little meatier, which he loves.
As I said earlier, I’m not much of a cook. soI prepare this in two bowls.
In the first bowl, I’ll pour in the bag of hash browns. I like to use the Simply Potatoes Shredded Hash browns that are in the refrigerated section at the grocery store. I’ve used frozen before, but you’ll have to thaw ahead of time.
Now add the cheese. Save about ½ a cup of cheese to add on top the last five minutes of baking. Or if you’re like me, I like it cheesy so I just sprinkle extra on top.
Now in the second bowl, combine the eggs, milk and pepper and whisk together.
Once the sausage is browned, add to bowl of hash brown mixture. Stir well.
Pour in bottom of the pan then add egg mixture on top.
Put in oven at 350 degrees for 35-40 minutes. Check and make sure it isn’t giggly or soupy. If not, add additional cheese and bake for five more minutes.
That’s it!
I’m a Texas girl so I serve with salsa.
Different Variations
You can really add anything to this breakfast casserole that you like. If I have time, I’ll add chopped onion and red bell pepper to the sausage. It gives it a little more flavor and adds some color. Occasionally, I’ll add ham. My son will add spinach when he makes it.
You can make this keto friendly by omitting the hash browns. But bake in a 9×9 square pan and reduce milk in half. Some keto diets exclude milk. If you are a serious Ketonian, substitute heavy cream for milk (I’d probably use ¼ c to ½ c).
I make this Christmas morning. Since the kids are older, and they sleep in, I can mix together, then throw it in the oven. It’s usually ready about the time we are done opening presents. If your mornings are hectic, you could mix up the night before and store in the refrigerator prior to baking.
This is a family favorite. It warms up well in the microwave and any left overs we eat throughout the week. This would also be great if you meal prep (but I’m not there yet).

Ingredients
- 6 Eggs
- 2 Cup Milk
- 2 Cup Shredded Cheese
- 1 bag 20 ounce Hash Browns refrigerated
- 1 lb Sausage
- 1/8 tsp Black Pepper
Instructions
- Preheat oven to 350 degrees.
- Grease 13×9 baking pan.
- Brown sausage until thoroughly cooked.
- Pour hash browns in separate mixing bowl
- Add cheese to bowl (I prefer cheddar). Save 1/2 cup to add to the top of casserole at the end of baking time.
- Once the sausage is browned, add to mixture and stir well.
- Pour in bottom of 13×9 pan.
- In separate bowl, add eggs, milk, and pepper, Whisk together.
- Pour on top of hash brown mixture.
- Put in oven and bake at 350 degrees for 35-40 minutes.
- Check casserole. If it’s not giggly or soupy, add remaining cheese on top and bake additional 5 minutes or until cheese is melted.
I love one-pot meals. Easy set up and easy clean up. Your breakfast casserole looks and sounds delicious.
