Recipes for an Abundance of Eggs

Now that you are getting a lot of eggs from your chickens. What do you do when you have an abundance of eggs? In the beginning, I was eating every type of egg for breakfast, scrambled, fried, poached, boiled, and even breakfast tacos.

Our six girls were producing so many, I couldn’t eat them all. I usually get four to six a day, that’s 2-3 dozen a week.

I was getting tired of the same thing over and over. So, I started looking on Pinterest for recipes when I have an abundance of eggs.

Easy Eggs Benedict Cups

I found a great recipe for Easy Egg Benedict Cups. The Bearded Rooster loves Eggs Benedict so I thought I’d give it a try. They turned out great. You could easily cut this recipe in half and make six depending on how many people you need to feed.

Simple Breakfast Casserole

One of my family’s favorites is this Simple Breakfast Casserole. I’ve made this the last few Christmas mornings. Once the sausage starts cooking and the aroma fills the house, my family wakes up. Then, I’ll throw it in the oven while we are opening presents and it’s ready to eat once we’re done.

Breakfast Quiche

Another delicious and simple breakfast I like to make is this Easy Ham and Cheese Quiche. Although I love a homemade crust, that defeats the “easy” part, so I use a frozen deep dish pie crust. The great part is my family never complains.

I saute my onions in real butter instead of Pam but besides that I follow the recipe exactly. If you want a keto friendly version, my friend Michelle at The Recipe Bandit has a great one.

Scotch Eggs

There’s a little pub not too far from the house that serves an awesome brunch. One of the options on the menu is Scotch Eggs. Our friend’s said we had to try them and ever since then, I’ve been looking for an easy recipe to make.

Frittata

How about a frittata? I love using my Granny’s cast-iron skillet any chance I get and this recipe is perfect for it.

Over the last few years, eggs have really made a come back.

In addition to adding them to salads, people are putting them on pizzas, burgers, nachos and I recently saw a recipe with Sloppy Joes.

They are truly a super food with all the protein and nutrients. It’s believed that eggs from backyard chickens are even more nutritious than store bought.

Our kids come over once a week for dinner, and when I have too many eggs, I’ll make one of these recipes – Always a hit!

It’s a great feeling knowing where your eggs come from and what your birds are eating. That old saying comes to mind You are what you eat.

  5. I love eggs! They are so yummy in salads and on burgers. Although eating an egg on a burger while in a restaurant is one of the least-graceful foods out there. Lol. I love how the yolk adds a creamy element and acts almost like a condiment or sauce. I will be trying your breakfast casserole out on my husband one of these days. It sounds fantastic. I can never get him to eat quiche, so the casserole could be the next best thing!

  7. When I have extra eggs, I make breakfast casseroles, quiches, or (my favorite) deviled eggs. Deviled eggs are so easy; I just mix together the yolks, some mayo or Miracle Whip, sweet pickle relish, and a little dry mustard. They’re perfect to take to a picnic or family dinner.

    1. I love Deviled Eggs. My husband makes for family functions and adds garlic salt to his.

  8. Thanks for the recipes! I actually follow you on Pinterest but never looked at the recipe boards. I only eat free-range eggs, (which is why I want to raise my own chickens someday) and a neighbor down the street has sort of a food bank and they always get all the free-range and organic eggs from Trader Joes that are going to expire soon as well as from Publix and Whole Foods and they give them to us. so we always have an abundance of eggs! We make a vegetarian version of bacon quiche (which a vegan fake bacon strips) but other than quiche and eggs we have in salad I didn’t really know how else to use them. Now, thanks to you, I do!

    1. That is awesome that Trader Joes, Publix, and Whole Foods donate eggs to your neighbor. I usually post simple recipes because I”m not much of a cook! Let me know if you try any of them.

  10. These look like great egg recipes! I know when I have an abundance of eggs I always make custard and then pavlova with the leftover whites. My family has a sweet tooth and this is always a big winner for dessert and pavlova with custard filling uses quite a few eggs up!

  11. I love eggs! Always delicious for me and so many ways to cook. I know a lot of people can’t eat eggs but my body doesn’t mind so I enjoy it the fullest. fritatas and eggs Benedict are often enough on breakfast table.

    1. Our city allows us to have 6 hens but no rooster. More and more cities are coming around to backyard chickens.
