What to do with left over Easter Peeps?

Peeps are a cornerstone of Easter. With the bright colors, they make the perfect addition to your kid’s Easter Baskets. But does anyone really eat them?

My mother-in-law still gets my grown kids Peeps and gives them a little Easter money each year. My nephew is the only one that eats them. While perusing Pinterest for some Easter recipes, I ran upon some great ideas for what to do with left over Easter Peeps.

Peeps Rice Krispie Squares

These were amazing! I couldn’t believe it. I made these on Wednesday night when the kids came over for dinner.

Worried they wouldn’t taste good, I bought the store brand Rice Crispies cereal. The small box was $1.12 so if they turned out horribly, it wouldn’t bother me to throw them out. I’m big on buying store brands anyways.

But that wasn’t the case. They turned out a little sweeter than when using regular marshmallows. But that was ok with me and there were none left over so the kids didn’t mind it either.

I think some of the colors are flavored. So just be aware in case you use multiple colors.

To make Rice Krispie Peeps

Put one box of Peeps in a microwave safe bowl.

Add a Tablespoon of butter then microwave for 40 seconds.

Stir in 2 cups Rice Krispie cereal

Then microwave for an additional 15 seconds.

Now press in pan.

If you use a rubber spatula and spray with Pam, it will make pressing in the pan so much easier and no sticking.

I greased an 8×8 pan. Since this was an experiment and just for my kids, I didn’t do anything too fancy. I saw some people used a loaf pan and made popsicle type treats and layered different colors.

Repeat with each box. I used 3 boxes for an 8×8 pan. It took less than 5 minutes total.

Peeps Infused Vodka

Easter Peeps Vodka

A few years ago a friend of mine made candy infused Vodka. She used lemon heads, skittles, peppermints and red hots. She put in cute glass containers and gave as gifts. This would be another great use for the Peeps.

I haven’t made this recipe but I did enjoy the Vodka she gave me.

Peeps Infused Vodka

Ingredients

  • 3 boxes Peeps Marshmallow Candy
  • 750 ml Vodka

Instructions

  • Place Peeps in Large glass container. I like to use a Mason jar.
  • Cover with Vodka. Fill jar 7/8 full.
  • Put in fridge. Shake every day. 
  • After 3 days, it may be ready to strain (if not just keep in frig a few days longer). 
  • The candy should break down but there may be some remnants. Some like to leave in the Vodka. 
  • Use cheesecloth or coffee filter to strain. 
  • Stor in frig or freezer.

The Traditional Cupcake or Cake Topper

I had already decided to make a carrot cake for Easter. So, I used two peeps on the top of the cake as decoration. It really was cute!

We had met my mother-in-law for dinner the night before (for the Bearded Rooster’s birthday) so I had 4 boxes of Peeps at my house.

This was a last minute thought. I’d seen where people used coconut with green food coloring to resemble grass. Since, I’m the only one in the family that likes coconut, I used sparingly like a little grassy patch on top of the cake. You could use icing with green food coloring also.

I’m already wishing I had more Peeps to make the Rice Krispie squares. I’ve looked at several stores but they’re sold out! Next year I’ll definitely buy several extra boxes.

  • 3 box Peeps Marshmallow Candy
  • 3 tbsp Butter divided
  • 6 cup Rice Krispie cereal divided

Instructions

  • Place 1 box of Peeps Marshmallow Candy in microwave safe bowl 
  • Add 1 tablespoon of butter and microwave on high 40 seconds
  • Stir then add 2 cups Rice Krispie cereal

  • Microwave additional 15 seconds
  • Press in bottom of 8×8 pan 
  • Repeat for each box of Peeps.
