- 7-8 Potatoes washed and peeled
- 32 ounces Chicken Broth
- 1 Onion diced
- 2 tsp Salt
- 2 tsp Garlic Powder
- 1 tsp Pepper
- 2 cups Sour Cream
- 2 cups Half and Half
- 1 lb Bacon cooked and crumbled
- 2 cups Sharp Cheddar Cheese shredded
Place potatoes and onion in the bottom of your Instant Pot
Season with salt, pepper, and garlic powder.
Add the chicken broth.
Put the lid on your Instant Pot and set the time to 2 minutes.
After cooking, do a quick release.
Remove potatoes and mash to the consistency that you like (we like ours a little chunky).
Turn the Instant Pot to saute and set the timer for 5 minutes.
Add the sour cream and half and half.
Add the bacon
Slowly add in the cheddar cheese, stirring frequently so the cheese doesn't stick.
Serve with extra cheddar cheese, bacon crumbles, and chives if desired.
