Well, I finally got on the Instant Pot bandwagon. My mom got one for my birthday and I just love it. I’ve only made three recipes (one was a total fail) but the other two were delicious. I’ve made the Instant Pot Potato soup recipe four times. The first time I made a small batch and my family ate it all in one night. The Bearded Rooster requested I make a second batch the next day. He just didn’t get enough.

This was so simple. The third time I made it, I tried to double the recipe. My Instant Pot is 6 quarts and wouldn’t hold double the potatoes so it was soupier than when I originally made the recipe. It was totally fine but the Beard Rooster is a meat and potatoes man so, the following day, I boiled extra potatoes, mashed them then added to the leftovers.

If you’ve followed me for very long, you know I’m not much of a cook. I usually don’t deviate from recipes. I’m afraid if I do, it won’t turn out. No worries with this recipe. 

The last time I made it I substituted ham for the bacon. We had leftover potatoes and needed to cook them. I’d offered to make mashed potatoes to go with the ham but my family hands down insisted on the Instant Pot Potato Soup. My daughter said it’s her second favorite meal after a good rib-eye steak.

As I mentioned earlier, I had a big fail with one of the recipes I tried. My Instant Pot kept saying food burn and would shut off. It was a chicken and dressing recipe. I’m not sure what I did wrong but with the Instant Pot Potato Soup, I didn’t have that. I assume because it is just pressure-cooking the potatoes and the rest of the recipe is on saute. 

Every time I make this now, I double the recipe because my husband loves leftovers. It’s nice not having to worry about what you are having for dinner the next day and this recipe warms up nicely. It’s simple but packs a load of flavor.

Easy Instant Pot Potato Soup

Ingredients

  • 7-8 Potatoes washed and peeled
  • 32 ounces Chicken Broth
  • 1 Onion diced
  • 2 tsp Salt
  • 2 tsp Garlic Powder
  • 1 tsp Pepper
  • 2 cups Sour Cream
  • 2 cups Half and Half
  • 1 lb Bacon cooked and crumbled
  • 2 cups Sharp Cheddar Cheese shredded

Instructions

  • Place potatoes and onion in the bottom of your Instant Pot
  • Season with salt, pepper, and garlic powder.
  • Add the chicken broth.
  • Put the lid on your Instant Pot and set the time to 2 minutes.
  • After cooking, do a quick release.
  • Remove potatoes and mash to the consistency that you like (we like ours a little chunky).
  • Turn the Instant Pot to saute and set the timer for 5 minutes.
  • Add the sour cream and half and half.
  • Add the bacon
  • Slowly add in the cheddar cheese, stirring frequently so the cheese doesn't stick.
  • Serve with extra cheddar cheese, bacon crumbles, and chives if desired.
